SKIMMING KING OF CHEESES THE ART OF PARMIGIANO-REGGIANO With its crystalline crunch and sharp, savory flavors, Parmigiano-Reggiano cheese has stood the test of time for over nine centuries. This is due in no small part to the extraordinary and scrupulous process that goes into making it. From its exclusive production in the provinces of Northern Italy to the highly regulated aging process, Parmigiano-Reggiano is a culinary work of art. Like all cheeses, the process begins with milk. But unlike other cheeses, the milk used in Parmigiano is legally required to come from cows living in Parma, Reggio, and Modena. They're fed a strict died of all-natural, locally grown forage. Cows that are fed corn will generally produce a lighter, milkier-tasting Parmigiano, while cows that are fed grass and wild herbs in the summer produce a richer-flavored cheese. The milk is then heated in massive copper cauldrons to around 131 degrees Fahrenheit until it coagulates. Each cauldron can produce two 80-pound curd wheels, which are then soaked in a salt bath and placed in maturation rooms for a minimum of 12 months.
